Method

  1. Finely dice the onion and garlic and fry them in the olive oil and butter.
  2. Slice the mushrooms, add to the pan once the onions have softened.
  3. Add the rice and coat in the oil.
  4. Ladle in the stock until mostly absorbed. Continue until the rice is cooked.
  5. Serve with grated parmesan and black pepper.
